After graduating from the university, Ladislav has worked in the food industry with establishing production line of vegetable sprouts, green production  and developing innovative foods.

 

Ladislav has in collaboration with our local gluten-free bakery, The Rycon Bakery, and their experienced bakers developed and created revolutionary gluten-free baking.

SULFORAPHANE – FUTURE FOOD

 

Ladislav also participates as a researcher in projects such as Foods high in sulforaphane QK1910264. Research of low-energy consuming technologies of crop production QF4080. Nutrient Concentrate (liquid and powder) 252611 aswell as other projects.

 

Recently there has been a growing interest in research on antioxidants derived from plants, and the impact it has on human health when they are added to food. There is growing evidence that diets rich in phytochemicals, flavonoids, polyphenols and antioxidants have potential health benefits for consumers.

 

As a consequence our cornerstone in Pure Food Norway, with support from the Research Council of Norway, is focusing on innovative nutrients that are nutrient-dense in foods.

 

According to latest research, broccoli sprouts are one of the most valuable sources of the multidirectional phytochemicals. Young sprouts contain many bioactive health-promoting compounds. They have been recognised as a rich source of versatile biologically active compounds such as flavonoids, polyphenols, glucosinolates and other endogenous metabolites with documented anti-cancer activity aswell as other preventive effects against modern diseases.

 

Therefore, Pure Food Norway has developed a new process for the production of freeze-dried nutrient-rich powder based on broccoli sprouts and other key plants. Special attention is paid to the preservation of phytochemicals, polyphenols, antioxidants and glucosinolates (mainly sulforaphane). The products of Pure Food are developed to increase the nutritional value of a wide variety of foods. Read more about our projects here.
